German Chocolate Cake is a classic dessert known for its rich chocolate layers and coconut-pecan filling. This recipe delivers a moist and indulgent cake that’s perfect for special occasions or a delightful treat.

German Chocolate Cake

Ingredients:

For The Cake:

  • Cooking spray for greasing pans
  • 4 ounces sweet baking chocolate
  • 1/2 cup water
  • 2 1/4 cups all-purpose flour or 2 1/2 cups cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups granulated sugar
  • 1 cup (2 sticks) butter, room temperature
  • 4 large eggs, separated
  • 1 teaspoon vanilla
  • 1 cup milk

Filling and Topping – Coconut and Pecan Nuts:

  • 3 egg yolks
  • 1 cup granulated sugar or brown sugar
  • 1/2 cup (1 stick) butter
  • 1 cup evaporated milk (from a 12-ounce can)
  • 1 teaspoon vanilla
  • 1 1/3 cups shredded coconut
  • 1 cup chopped pecans

How To Make German Chocolate Cake:

  1. Preheat the oven to 350°F. Grease the bottoms and sides of three 8-inch round cake pans or two 9-inch round cake pans with cooking spray. Cut parchment paper rounds to fit the bottoms of the pans, then attach them with cooking spray.
  2. Coarsely chop the sweet baking chocolate. In a 1-liter saucepan, melt the chocolate with water over low heat, stirring frequently until completely melted. Set aside to cool.
  3. In a medium bowl, combine the flour, baking soda, and salt. Set aside. In another medium bowl, use an electric mixer to blend 2 cups sugar and 1 cup butter until light and fluffy.
  4. Add the egg yolks one at a time to the sugar mixture, beating well after each addition. On low speed, mix in the melted chocolate and vanilla. Alternately add the flour mixture and milk in batches, beginning and ending with the flour mixture, until smooth.
  5. In a separate clean, dry bowl, beat the egg whites with an electric mixer on high speed until stiff peaks form. Gently fold the beaten egg whites into the batter until well combined.
  6. Divide the batter evenly among the prepared pans. Use a rubber spatula to spread the batter evenly and smooth the tops.
  7. Bake 8-inch pans for 35 to 40 minutes or 9-inch pans for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then transfer them to cooling racks to cool completely, about 1 hour.

For the Filling and Topping:

  1. In a 2-liter saucepan, combine 3 egg yolks, 1 cup sugar, 1/2 cup butter, evaporated milk, and vanilla. Cook over medium heat for 12 minutes, stirring constantly until thickened and bubbly. Stir in coconut and pecans. Cool the mixture for 30 minutes, stirring occasionally until it becomes spreadable.
  2. Assemble the cake by placing one layer on a cake plate, rounded side down. Spread a third of the filling over the layer. Add the second layer, rounded side down, and spread another third of the filling. Place the third layer rounded side up and cover with the remaining filling, leaving the sides of the cake unfrosted.
  3. Keep the cake covered in the refrigerator until ready to serve.

  • Be sure to cool the melted chocolate before adding it to the batter to prevent it from cooking the eggs.
