Garlic Roasted Chicken Thighs with Parmesan Gravy is a delectable dish marrying the succulence of roasted chicken with a luxurious Parmesan-infused sauce. Enhanced by the aromatic blend of garlic and thyme, this dish offers a comforting and flavorful experience.

Garlic Roasted Chicken Thighs with Parmesan Gravy

Ingredients:

  • 6 Bone-in, skin-on chicken thighs
  • 2 tbsp. Olive oil
  • Salt and pepper to taste
  • 1 Small onion, chopped
  • 6 Cloves garlic
  • 1 tsp. Thyme
  • 1 cup Bone broth
  • 2/3 cup Shredded or grated Parmesan cheese
  • 3 tbsp. Heavy whipping cream

Instructions:

  1. Preheat your oven to 400 degrees.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
  3. Place chicken thighs in the skillet, skin side down. Season with salt and pepper. Sear for 2-3 minutes on each side until browned; then, remove them from the skillet.
  4. In the same skillet, add chopped onion and garlic. Sauté for 2-3 minutes until onions soften and brown.
  5. Add 1 teaspoon of thyme, stirring until fragrant.
  6. Pour in 1 cup of bone broth.
  7. Whisk in 3 tablespoons of heavy whipping cream.
  8. Toss in 2/3 cup Parmesan cheese. For shredded cheese, add gradually and whisk quickly to combine; grated Parmesan will mix more easily with the sauce.
  9. Return the chicken thighs to the skillet with the sauce. Place the skillet in the oven and roast for 15-20 minutes until the chicken is cooked through.
  10. Spoon the sauce over the chicken thighs and serve, topped with fresh Parmesan or herbs.

  1. Searing Perfection: Achieve a perfect sear by ensuring the skillet is hot before adding the chicken. This adds a delightful crust to the skin.
  2. Cheese Incorporation: When using shredded Parmesan, add it gradually and whisk quickly to prevent clumping. Grated Parmesan smoothly blends into the sauce.
  3. Complete Cooking: Confirm the chicken is fully cooked by checking its internal temperature, ensuring it reaches at least 165°F (74°C).
  4. Presentation: Elevate the dish by garnishing with additional fresh Parmesan or herbs for both added flavor and visual appeal.
  5. Serving Suggestions: Pair this dish with complementary sides such as roasted vegetables, mashed potatoes, or a crisp green salad.
