This Garlic Roasted Chicken and Potatoes dish is a comforting and satisfying meal that’s perfect for any day of the week. Tender chicken, golden potatoes, and sweet roasted garlic come together to create a flavorful and hearty dinner.
Ingredients:
- 1/4 cup butter
- 6 chicken leg quarters, split into drumsticks and thighs
- 6 large Yukon Gold potatoes, cut into chunks
- 24 cloves garlic, unpeeled
- Salt and ground black pepper to taste
- 1/4 cup maple syrup
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Roasting Pan:
- Place the butter in a roasting pan and melt it in the preheated oven. Swirl the melted butter to coat the bottom of the pan evenly.
- Arrange Ingredients in the Pan:
- Once the butter is melted, add the chicken drumsticks, thighs, potatoes, and unpeeled garlic cloves to the roasting pan. Season everything with salt and black pepper, then turn to coat the chicken, potatoes, and garlic in the melted butter.
- Bake the Chicken and Potatoes:
- Bake in the preheated oven for about 40 minutes, basting the chicken and potatoes with the pan drippings 3 times during cooking.
- Add Maple Syrup:
- After 40 minutes, brush the chicken pieces with maple syrup and spoon some of the pan drippings over the potatoes.
- Continue Baking:
- Return the pan to the oven and bake for an additional 20 minutes, or until the chicken and potatoes are tender and browned.
- Check for Doneness:
- To ensure the chicken is fully cooked, use an instant-read thermometer inserted into the thickest part of a thigh. It should register at least 165°F (74°C).
- Serve:
- To serve, squeeze the roasted garlic cloves from their skins and spread the soft garlic over the chicken. Pour any remaining pan juices over the chicken and potatoes before serving.
