GARLIC PARMESAN ROASTED POTATOES

Garlic Parmesan Roasted Red Potatoes are a savory and crispy side dish that pairs perfectly with any main course. Coated with a blend of aromatic herbs, garlic, and Parmesan cheese, these potatoes are roasted to golden perfection and finished with a touch of butter and fresh parsley. This easy-to-make recipe brings out the natural flavors of red potatoes, making it a family favorite.

Ingredients:

  • 3 pounds red potatoes, halved
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/3 cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper, to taste
  • 2 teaspoons unsalted butter
  • 2 teaspoons chopped parsley leaves

Instructions:

  1. Preheat and Prepare:
    Preheat your oven to 400°F (200°C). Prepare a baking sheet by coating it with non-stick spray or greasing it lightly.
  2. Combine Ingredients:
    In a large bowl, add the halved red potatoes. Drizzle with olive oil and add the minced garlic, dried thyme, oregano, basil, and grated Parmesan cheese. Season with kosher salt and freshly ground black pepper to taste.
  3. Mix and Coat:
    Toss the potatoes thoroughly to ensure they are evenly coated with the olive oil, herbs, garlic, and Parmesan cheese.
  4. Arrange on Baking Sheet:
    Place the coated potatoes in an even layer on the prepared baking sheet, with the cut side down.
  5. Roast the Potatoes:
    Roast in the preheated oven for about 25-30 minutes, flipping the potatoes halfway through the cooking time to ensure they brown evenly and become crispy.
  6. Add Butter and Parsley:
    While the potatoes are roasting, melt the butter on the stove or in the microwave (about 1 minute). Once the potatoes are done roasting, remove them from the oven and drizzle with the melted butter. Sprinkle with chopped parsley leaves for a fresh finish.
  7. Serve:
    Serve hot as a delicious side dish to complement your main course. Enjoy the crispy, flavorful potatoes with their aromatic garlic and herb coating.

Notes and Tips:

  • Make sure the potatoes are cut into even halves to ensure uniform cooking.
  • For added crispiness, you can increase the oven temperature to 425°F (220°C) and adjust the cooking time as needed.
  • Fresh herbs can be used instead of dried for a more intense flavor. Use about three times the amount of fresh herbs as the dried version.
  • This dish pairs well with roasted meats, grilled chicken, or fish, and can also be enjoyed on its own as a tasty snack.
