GARLIC & LEMON CHICKEN WITH RED POTATOES & GREEN BEANS

Indulge in the vibrant flavors of garlic and lemon with this savory Garlic & Lemon Chicken dish, complete with tender red potatoes and crisp green beans. Perfectly seasoned and roasted to perfection, this dish is a delightful combination of tangy citrus, aromatic garlic, and earthy vegetables.

Ingredients:

  • 6 tablespoons olive oil
  • 2 lemons (1 thinly sliced, 1 juiced)
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 pound trimmed green beans
  • 8 small red potatoes, quartered
  • 4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

How To Make Garlic & Lemon Chicken with Red Potatoes & Green Beans:

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C). Coat a large baking dish or cast-iron skillet with 1 tablespoon of olive oil. Arrange the thinly sliced lemon slices in a single layer in the bottom of the dish or skillet.
  1. Prepare the Marinade:
  • In a large bowl, combine the remaining olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breasts, green beans, and quartered red potatoes to the bowl, and toss everything together until evenly coated with the marinade.
  1. Assemble and Roast:
  • Pour the chicken, potatoes, and green beans mixture into the prepared baking dish or skillet, spreading it around evenly.
  • Roast in the preheated oven for about 50 minutes or until the chicken is cooked through and the vegetables are tender and golden brown.
  1. Serve:
  • Once cooked, remove the dish from the oven and serve the Garlic & Lemon Chicken with Red Potatoes & Green Beans warm.

Tips:

  • For extra flavor, you can add additional herbs and spices to the marinade mixture, such as thyme, rosemary, or paprika.
  • Ensure that the chicken breasts are cooked through by checking their internal temperature with a meat thermometer. The chicken is done when it reaches an internal temperature of 165°F (75°C).
  • If you prefer, you can use boneless, skinless chicken breasts for a leaner option, but adjust the cooking time accordingly as they may cook faster.
  • Feel free to customize the dish with your favorite vegetables, such as carrots, bell peppers, or onions.
  • Serve this dish alongside a fresh salad or crusty bread for a satisfying and complete meal.
