Fried Potatoes, Onions, and Smoked Polish Sausage

This hearty and flavorful skillet dish is the perfect comfort meal for busy weeknights or a casual weekend dinner. Tender potatoes, sautéed onions, crisp bell peppers, and smoky Polish sausage come together in a single pan to create a meal packed with bold flavors and satisfying textures. Top with shredded Parmesan for a savory finishing touch.

Ingredients:

  • 1½ pounds russet potatoes, diced into ½-inch cubes
  • 1 pound smoked Polish sausage, sliced
  • 2 tbsp olive oil
  • ½ tsp seasoned salt
  • ½ tsp Italian seasoning
  • ½ large red bell pepper, diced
  • ½ large green bell pepper, diced
  • 1 small onion, diced
  • Black pepper, to taste
  • Shredded Parmesan cheese (optional, for garnish)

Instructions:

1. Sauté the Onions

  • Heat 1 tbsp of olive oil in a large skillet over medium heat.
  • Add the diced onion and cook until translucent and softened, about 5 minutes.
  • Remove the onions from the pan and set them aside.

2. Cook the Potatoes

  • In the same skillet, heat 1 tbsp olive oil and 1 tbsp butter until melted.
  • Add the diced potatoes, seasoned salt, Italian seasoning, and a pinch of black pepper.
  • Cover the skillet and cook over medium heat, stirring occasionally, for 15 minutes or until the potatoes are tender but still hold their shape.

3. Add the Sausage and Peppers

  • Add the sliced smoked sausage to the skillet and cook for an additional 10 minutes, stirring occasionally, until the sausage is browned.
  • Stir in the diced red and green bell peppers and the sautéed onions. Cook until the peppers are tender-crisp, about 5 minutes.

4. Garnish and Serve

  • If desired, sprinkle shredded Parmesan cheese over the dish just before serving.
  • Serve hot and enjoy!

  1. Pre-cook the Potatoes: To speed up cooking, you can parboil the potatoes for 5 minutes before sautéing.
