This French Onion Chicken Bake combines the rich, savory flavors of French onion soup with tender, juicy chicken breasts. Ingredients:

  • 4 tablespoons butter
  • 2 tablespoons balsamic vinegar
  • 2/3 cup low sodium beef broth
  • 4 onions, peeled and sliced
  • 1 cup mozzarella cheese, shredded
  • 4 boneless, skinless chicken breasts
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 4 cloves garlic, minced
  • 1 teaspoon thyme

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
  • Lightly grease a baking dish with cooking spray.
  1. Caramelize the Onions:
  • In a large skillet over medium-high heat, melt the butter.
  • Add the sliced onions and sauté for a few minutes until they start to soften.
  • Reduce the heat to medium-low and add the minced garlic, pepper, and thyme. Sauté until fragrant.
  • Pour in the balsamic vinegar and beef broth, stirring to combine. Be sure to scrape up any browned bits from the bottom of the skillet.
  • Simmer the mixture for about 10 minutes, or until the onions are caramelized and the liquid has reduced.
  1. Assemble the Dish:
  • Spread 1/3 of the caramelized onion mixture evenly in the prepared baking dish.
  • Place the chicken breasts on top of the onion layer and season them with salt.
  • Spread the remaining onions over the chicken breasts.
  • Sprinkle a generous amount of shredded Parmesan and mozzarella cheese over the onions.
  1. Bake:
  • Place the baking dish in the preheated oven and bake for about 30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  1. Serve:
  • Remove the dish from the oven and let it rest for a few minutes at room temperature.
  • Serve warm, and enjoy!
