Fiesta Chicken is a simple and flavorful dish that combines tender chicken, black beans, corn, and salsa for a Mexican-inspired meal. Cream cheese adds a creamy texture, making it perfect for serving over rice or in warm tortillas. This recipe is a great option for busy weeknights, as it can be prepared in a slow cooker with minimal effort.

Ingredients:

  • 4 boneless, skinless chicken breasts, frozen or thawed (around 1.5 lbs)
  • 1 (15.5-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) jar of your favorite salsa
  • 2 tablespoons taco seasoning (optional)
  • 1 (8-ounce) package cream cheese, softened

Instructions:

  1. Prepare the Slow Cooker:
  • Place the frozen or thawed chicken breasts in the crock pot.
  • Add the drained and rinsed black beans, drained corn, salsa, and taco seasoning if using.
  1. Cook:
  • Set the crock pot on low and cook for about 4-5 hours, or until the chicken is fully cooked.

  • Once the chicken is cooked, remove it from the crock pot and shred it using two forks.
  • Return the shredded chicken to the crock pot.
  1. Add Cream Cheese:
  • Place the softened cream cheese on top of the chicken mixture. It may look a bit unusual at this point, but don’t worry.
  • Let the cream cheese sit for about 30 minutes to soften and melt into the mixture.
  • Stir well to combine the cream cheese thoroughly.

  • Serve the Fiesta Chicken over rice or in warm flour tortillas.
  • Optionally, top with shredded cheese, avocado slices, chopped cilantro, or a squeeze of lime for extra flavor.
