This Easy Strawberry Pie is a perfect balance of sweet, tangy, and fresh flavors, making it the ideal dessert for warm-weather gatherings or any time you want a refreshing, fruity delight. With a crispy pie crust, juicy strawberries, and a glossy strawberry Jell-O filling, this pie offers a nostalgic, crowd-pleasing treat that’s as delicious as it is easy to make. Serve it topped with a dollop of whipped cream for a truly irresistible dessert!

Ingredients

  • 1 deep dish pie crust, pre-baked and cooled completely (see notes below)
  • 2 cups water
  • 2 cups granulated sugar
  • 6 tablespoons cornstarch
  • 6-ounce package strawberry Jell-O (or 2, 3-ounce boxes)
  • 3 pounds fresh strawberries, stems removed and quartered
  • Whipped cream, for serving

Instructions

1. Prepare Your Pie Crust:

  • If you’re using a store-bought frozen pie crust, be sure to cut the filling recipe in half since frozen crusts are typically smaller than homemade deep-dish ones.
  • Bake your deep dish pie crust according to package instructions or recipe, and allow it to cool completely before adding the filling. This helps prevent the crust from becoming soggy.

2. Make the Strawberry Jell-O Filling:

  • In a medium saucepan, combine water, sugar, and cornstarch. Bring the mixture to a boil, stirring frequently to ensure there are no lumps. The mixture should become thick and turn clear.
  • Once thickened, remove from heat and stir in the strawberry Jell-O. Mix well until the Jell-O is completely dissolved and incorporated into the filling.
  • Let the Jell-O mixture cool to room temperature before adding the strawberries.

3. Add the Strawberries:

  • Once cooled, gently fold in the freshly quartered strawberries to evenly coat them with the Jell-O mixture.

4. Fill the Pie Crust:

  • Pour the strawberry filling into your pre-baked pie shell, smoothing out the top for an even layer.
  • Place the pie in the refrigerator to chill and set completely, for at least 3 hours or overnight. The Jell-O will firm up and hold the strawberries together.

5. Serve:

  • Slice and serve with a generous dollop of whipped cream for an extra indulgent touch.

Tips for the Perfect Strawberry Pie:

  • Choose Fresh Strawberries: For the best results, use fresh, ripe strawberries to ensure the filling is sweet and flavorful. Frozen strawberries tend to release too much water and can make the filling runny.
  • Cool Completely: Allow the Jell-O filling to cool before mixing in the strawberries to prevent them from becoming mushy.
  • Deep Dish Crust is Key: Since this pie is packed with strawberries, use a deep dish pie plate. If you only have a shallow pie crust, halve the recipe to avoid overflowing.

This Easy Strawberry Pie is a bright, refreshing dessert with a vibrant color and juicy flavor that’s sure to impress at any gathering. It’s a slice of summer on a plate!
