This Easy Rocky Road recipe is a decadent no-bake treat loaded with rich chocolate, creamy peanut butter, crunchy nuts, and soft marshmallows. Ingredients

  • 2 cups semisweet chocolate chips
  • ¾ cup creamy peanut butter
  • 1 cup chopped walnuts
  • ½ cup chopped peanuts
  • 3 cups miniature marshmallows

Instructions

  1. Prep the Pan
  • Line a 9 x 9-inch pan with parchment paper or foil, leaving some overhang for easy removal.
  1. Melt the Chocolate and Peanut Butter
  • In a medium pot over low heat, melt the chocolate chips and peanut butter, stirring until the mixture is completely smooth.
  1. Add Nuts and Cool
  • Stir in the chopped walnuts and peanuts, then remove the pot from heat. Allow the mixture to cool for about 3–4 minutes to prevent marshmallows from melting.
  1. Fold in Marshmallows
  • Gently fold in the miniature marshmallows until they are evenly coated in the chocolate mixture.
  1. Spread and Chill
  • Spread the rocky road mixture into the lined pan, pressing gently to level. Refrigerate for 2 hours or until set.
  1. Cut and Serve
  • Once firm, lift the mixture out of the pan using the parchment overhang and cut into 16 squares. Enjoy!
