Easy Oven-Roasted Potatoes

These Easy Oven-Roasted Potatoes are the perfect side dish for any meal. Crispy on the outside and fluffy on the inside, they’re seasoned with a delicious mix of garlic, paprika, and fresh herbs for maximum flavor. With minimal prep and ingredients, these potatoes are a go-to recipe that works for breakfast, lunch, or dinner!


Ingredients

  • Main Ingredients:
  • 2 pounds red potatoes, yellow potatoes, or Yukon gold potatoes
  • 2 tablespoons olive oil
  • Seasoning:
  • 1 teaspoon garlic powder
  • 3 tablespoons chopped fresh herbs (rosemary, parsley, thyme, or basil) or 2 teaspoons dried herbs
  • ½ teaspoon paprika
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

1. Prep the Potatoes:
Preheat your oven to 425°F. Scrub the potatoes clean but leave the skin on for added texture and flavor. Dice them into 1-inch cubes for even cooking.

2. Optional Step:
For the crispiest roasted potatoes, soak the diced potatoes in cold water for up to 1 hour. This removes excess starch, resulting in a fluffier interior. After soaking, drain the potatoes thoroughly and pat them dry with a clean towel.

3. Season the Potatoes:
In a large mixing bowl, toss the potatoes with olive oil, garlic powder, herbs, paprika, salt, and pepper until evenly coated.

4. Roast:
Spread the potatoes out in a single layer on a large baking sheet. Roast in the preheated oven for 30–35 minutes, stirring halfway through, until the potatoes are golden brown and tender when pierced with a fork.

5. Serve:
Transfer the roasted potatoes to a serving platter. Garnish with a sprinkle of fresh herbs for a pop of color and serve hot.


Tips for Perfect Oven-Roasted Potatoes

  • Use the Right Potatoes:
    Red or Yukon gold potatoes work best as they hold their shape and develop a creamy interior.
  • Space Them Out:
    Overcrowding the baking sheet can lead to steaming instead of roasting. Arrange the potatoes in a single layer with space in between for optimal crispiness.
  • Add Variety:
    Include sweet potatoes, carrots, or parsnips for a colorful medley.
  • Experiment with Herbs:
