Easy No-Bake Chocolate Oatmeal Cookies

These No-Bake Cookies are a classic treat, perfect for when you want something sweet without turning on the oven. Made with simple ingredients like cocoa, peanut butter, and oats, these cookies are rich, chewy, and satisfyingly chocolatey. They set quickly in the fridge, making them a go-to option for an easy dessert or a quick snack.


Ingredients

  • 2 cups granulated sugar
  • ½ cup butter
  • ½ cup milk
  • ½ cup unsweetened cocoa powder
  • ½ cup peanut butter
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon salt
  • 3 cups quick oats

Instructions

  1. Prepare the Baking Sheets
  • Line two baking sheets with parchment paper and set them aside.
  1. Make the Chocolate Base
  • In a medium saucepan, combine the sugar, butter, milk, and cocoa powder. Stir and bring the mixture to a rolling boil over medium heat.
  • Once boiling, let it cook for 1 minute (this helps the cookies set properly).
  1. Add the Remaining Ingredients
  • Remove the saucepan from the heat. Whisk in the peanut butter, vanilla, and salt until the mixture is smooth. Stir in the oats until well combined.
  1. Form the Cookies
  • Using a spoon or cookie scoop, drop spoonfuls of the oat mixture onto the prepared baking sheets.
  • Refrigerate the cookies for at least 30 minutes or until set.

Tips for Perfect No-Bake Cookies

  • Boiling Time: Make sure to boil the sugar-butter mixture for exactly 1 minute after it reaches a rolling boil. Too short, and the cookies may not set; too long, and they can become crumbly.
  • Oat Texture: Quick oats work best as they blend smoothly. Avoid old-fashioned oats as they make the cookies too chewy.
  • Setting: For faster setting, place the baking sheets in the fridge. The cookies will be ready to enjoy in about 30 minutes!
