This Easy Ice Cream Cake is a rich, indulgent dessert perfect for special occasions or whenever you crave a sweet treat. With layers of fudgy brownies, crunchy Oreos, smooth ice cream, and caramel sauce, it offers the perfect blend of textures and flavors. The best part? It’s surprisingly simple to make! Whether it’s for birthdays, celebrations, or just a weekend indulgence, this ice cream cake is bound to impress.

Ingredients:

  • Brownie Layer:
  • 1 (20 oz) box of brownie mix, prepared as directed
  • Toppings:
  • 15 Oreos, roughly chopped
  • 13 oz hot fudge topping (room temperature or slightly warmed)
  • 3 quarts ice cream (slightly softened for easy spreading)
  • 12 oz salted caramel sauce (room temperature or slightly warmed)
  • Whipped Cream Topping:
  • 1 pint heavy whipping cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. Prepare the Brownie Base:
  • Preheat your oven and prepare the brownie mix according to package directions. Bake the brownies in a 9 x 13 pan for 19-22 minutes, ensuring the edges are done while the center remains slightly underbaked. Cool the brownies completely, then freeze for 30 minutes to set the base.
  1. Add the Hot Fudge and Oreos:
  • Once the brownies are firm, spread an even layer of hot fudge topping over them. Top the fudge with chopped Oreos, pressing the cookies into the fudge using an offset spatula to ensure they stick. Smooth the top and freeze for at least 30 minutes.
  1. Ice Cream Layer:
  • After the Oreo-fudge layer has firmed up, spread the softened ice cream evenly over the top. Use an offset spatula to smooth out the surface. Cover the pan tightly with plastic wrap and freeze for at least 6 hours, preferably overnight, to allow the ice cream to fully set.
  1. Caramel Layer:
  • When the ice cream has firmed up, pour the salted caramel sauce over the top, smoothing it with an offset spatula. Return the cake to the freezer while you prepare the whipped cream.
  1. Whipped Cream Topping:
  • In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Whip on high speed until stiff peaks form. Spread or pipe the whipped cream on top of the cake for a light, fluffy finishing layer.
  1. Final Freezing and Serving:
  • Freeze the assembled cake for at least 1 hour before serving. When ready to enjoy, cut into slices and serve immediately. The cake is best stored tightly covered and enjoyed within 3-4 days.

Tips and Tricks:

  • Brownie Layer: Make sure the brownies are underbaked in the center for a fudgier texture that pairs perfectly with the ice cream.
  • Ice Cream Options: You can customize the flavors by using different types of ice cream, like cookies and cream, chocolate chip, or strawberry. Just make sure the ice cream is softened so it spreads easily.
  • Caramel and Fudge: Ensure the fudge and caramel sauces are at room temperature or slightly warmed so they spread smoothly without melting the ice cream.
  • Whipped Cream Piping: For a decorative touch, use a piping bag with a star tip to create elegant swirls of whipped cream around the edges or across the top.
  • Make-Ahead Dessert: This cake is the perfect make-ahead dessert, as it requires freezing between layers. Make it the day before and allow ample time for it to set.

This Easy Ice Cream Cake offers a delightful mix of flavors and textures—gooey brownies, crunchy Oreos, creamy ice cream, and a smooth caramel finish, all topped with fluffy whipped cream. Perfect for a crowd, it’s sure to become a go-to dessert for any gathering!
