This Crock Pot Chili is a rich and flavorful classic that’s perfect for cozy dinners and gatherings alike. Slow-cooked for hours, the chili is infused with spices, tender ground beef, and a robust tomato and bean base. Ingredients

  • 3 pounds lean ground beef
  • 2 medium onions, diced into ½-inch pieces
  • 4 cloves garlic, minced
  • 12 ounces light beer (about 1 can or bottle)
  • 28 ounces canned whole tomatoes with juice (1 can)
  • 14 ounces canned diced tomatoes with juice (1 can)
  • 1 medium green bell pepper, diced (optional)
  • 14 ounces tomato sauce
  • 15 ounces canned red kidney beans, drained and rinsed (1 can)
Seasoning Mixture
  • 4 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoons dried parsley
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Prep the Seasoned Beef:
  • In a mixing bowl, combine half of the seasoning mixture with the ground beef, mixing until well distributed.
  1. Cook the Beef:
  • In a large skillet over medium heat, cook the ground beef with diced onions and garlic until there is no pink remaining. Drain any excess fat.
  • Pour in the beer and allow it to simmer, stirring occasionally, until most of the liquid has evaporated. This will enhance the depth of flavor.
  1. Combine in Slow Cooker:
  • Transfer the beef mixture to a slow cooker. Add the remaining ingredients, including the other half of the seasoning mixture, and mix well.
  • For a smoother texture, gently mash the whole tomatoes with a spoon after adding.
  1. Cook in the Crock Pot:
  • Cover and cook on high for 4 hours or on low for 7-8 hours. Once the chili is done, remove the lid and let it cool slightly before serving.
