This Easy Creamy Cornbread Casserole is the ultimate comfort food, combining sweet and savory flavors in a wonderfully moist and creamy texture. The perfect blend of cornbread, whole corn, and creamed corn creates a dish that’s ideal for holiday gatherings, potlucks, or a simple family dinner. This casserole is easy to whip up and pairs wonderfully with barbecued meats, chili, or even on its own as a hearty side.

Ingredients:

  • 2 large eggs
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 8.5 oz package cornbread mix
  • 15 oz can whole corn kernels, drained
  • 15 oz can creamed corn

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F and grease a 9×9-inch baking dish with nonstick cooking spray.Tip: You can use a slightly larger dish for a thinner casserole, or a deeper one for a fluffier result.

2. Mix the Wet Ingredients:

  • In a large mixing bowl, whisk together the eggs, sour cream, melted butter, and sugar until smooth and fully combined.Tip: Ensure the butter is slightly cooled before adding to avoid cooking the eggs.

3. Add the Cornbread Mix and Corn:

  • Stir in the cornbread mix, whole corn kernels, and creamed corn. Mix until everything is well incorporated.Tip: Don’t overmix—just stir until the ingredients are combined to keep the casserole light and fluffy.

4. Bake:

  • Pour the mixture into your prepared baking dish and spread it out evenly.
  • Bake in the preheated oven for 55-60 minutes, or until the top is golden and the edges are slightly crisp. A toothpick inserted into the center should come out clean or with a few crumbs.Tip: If the top starts to brown too quickly, loosely cover it with foil for the remaining bake time.

5. Cool and Serve:

  • Allow the casserole to cool for 5-10 minutes before serving. This gives it time to set, making it easier to slice and serve.

Tips for Success:

  • Sour Cream for Creaminess: The sour cream adds a rich, creamy texture that keeps the casserole moist. You can also substitute with plain Greek yogurt for a tangy twist.
  • Optional Add-Ins: To elevate the flavor, try adding shredded cheddar cheese or a pinch of jalapeños for a spicy kick.
  • Sweet or Savory: The tablespoon of sugar adds a slight sweetness, but you can adjust to your liking. If you prefer a completely savory version, you can omit the sugar altogether.

This Easy Creamy Cornbread Casserole is sure to be a hit at any meal. The combination of the sweet corn kernels with the soft, creamy cornbread is pure comfort food bliss. Perfectly golden on the outside and moist on the inside, it’s a crowd-pleaser every time!
