This Easy Burrito Casserole is a delicious, layered dish that combines all the flavors of a classic burrito into a convenient, hearty bake. It’s perfect for feeding a crowd or meal prepping for the week. With layers of seasoned beef, refried beans, corn, and cheese, this casserole is sure to be a hit!

Ingredients:

  • 1 ½ lb. ground beef
  • 1 pack taco seasoning mix
  • 1 can mild enchilada sauce
  • 1 can refried beans
  • 1 can corn, drained
  • 8 large flour tortillas, cut in half
  • 2 cups taco blend cheese
  • 1 small can green chilis
  • Green onions, for garnish

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  1. Cook the Ground Beef:
  • In a large skillet over medium-high heat, cook the ground beef until fully browned. Drain any excess fat.
  1. Season the Meat:
  • Add the taco seasoning to the cooked beef and stir well. Sauté for an additional 2-3 minutes to blend the flavors.
  1. Prepare the Filling:
  • Stir in the drained corn, enchilada sauce, refried beans, and green chilis. Mix until everything is well combined and let it simmer for about 5 minutes.
  1. Layer the Casserole:
  • In a well-greased 9×13-inch baking dish, place a layer of 4 tortilla halves to cover the bottom.
  • Spread half of the meat mixture evenly over the tortillas.
  • Sprinkle half of the shredded taco blend cheese over the meat mixture.
  1. Repeat the Layers:
  • Add another layer with the remaining tortilla halves.
  • Spread the remaining meat mixture on top of the tortillas.
  • Finish with the remaining shredded cheese sprinkled over the top.
  1. Bake:
  • Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  1. Garnish and Serve:
  • Once baked, remove the casserole from the oven and let it cool for a few minutes.
  • Garnish with freshly chopped green onions before serving, if desired.
