This easy Banana Upside Down Cake is a delicious twist on the classic upside-down dessert. With layers of caramelized bananas and a rich, moist yellow butter cake, it’s the perfect combination of sweet and fruity. The addition of banana pudding mix gives the cake an extra depth of flavor and a wonderfully tender texture. Ingredients:

For the Banana Topping:
  • ¾ cup brown sugar
  • 5 tablespoons butter, melted
  • ½ teaspoon cinnamon
  • 3-4 bananas, sliced
For the Cake:
  • 1 (15.25 oz) box yellow butter cake mix
  • 3 eggs
  • ⅓ cup vegetable oil
  • 1 cup water
  • 1 (3.4 oz) box banana pudding mix

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a bundt pan by generously spraying it with nonstick spray. Set it aside.
  2. Prepare the Banana Topping:
  • Arrange the banana slices in an even layer at the bottom of the prepared bundt pan.
  • In a medium bowl, whisk together the melted butter, brown sugar, and cinnamon until the sugar is slightly dissolved.
  • Pour the sugar mixture evenly over the banana slices.
  1. Make the Cake Batter:
  • In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, water, and banana pudding mix.
  • Beat the mixture according to the cake mix package directions until the batter is smooth.
  • Pour the batter over the banana topping in the bundt pan, spreading it into an even layer.
  1. Bake the Cake:
  • Bake at 350°F for 35–40 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool on a rack for 1 hour. This resting time helps set the cake and makes it easier to invert.
  1. Invert and Serve:
  • After 1 hour, run a knife around the edges of the cake to loosen it. Carefully invert the bundt pan onto a serving plate.
  • If any banana slices stick to the pan, gently remove them and place them back on top of the cake.
  1. Storage: Store the Banana Upside Down Cake at room temperature or in the refrigerator for up to 3 days.
