This Easy Banana Bread recipe is the perfect way to use up overripe bananas, resulting in a moist, tender loaf that’s full of flavor. Ingredients:

  • ½ cup buttermilk
    or combine ½ cup milk with 2 tsp lemon juice and let it curdle for a few minutes
  • ¾ cup butter, softened (1½ sticks)
  • 1½ cups granulated sugar
  • 1½ cups mashed very ripe bananas (about 3 large bananas)
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt

Optional Mix-Ins:

  • Chocolate chips
  • Nuts (walnuts or pecans)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 325°F (163°C). Grease two regular loaf pans or mini loaf pans, depending on your preference.
  2. Cream the Butter and Sugar:
    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This step ensures a tender crumb in your banana bread.
  3. Add Bananas and Eggs:
    Mash the ripe bananas in a separate bowl, then add them to the butter mixture along with the eggs. Mix until everything is well combined.
  4. Combine Dry Ingredients:
    In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Mix the Batter:
    Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk (or curdled milk) in two or three batches. Mix on low speed with a hand mixer or by hand until just combined. If you’re adding chocolate chips or nuts, gently fold them into the batter.
  6. Pour into Pans:
    For regular loaf pans, divide the batter evenly between two pans. For mini loaves, fill each cavity about halfway.
  7. Bake:
    For regular loaves, bake for 40-45 minutes, but depending on your oven, you may need 50-55 minutes. Check for doneness by inserting a toothpick in the center—it should come out clean or with just a few moist crumbs.
    For mini loaves, start checking after 20 minutes and continue baking until a toothpick comes out clean, keeping in mind that the size of mini loaf pans may vary.
  8. Cool & Serve:
    Allow the banana bread to cool in the pans for 10 minutes before transferring to a wire rack to cool completely. Enjoy as-is or with a spread of butter!

Tips:

  • Choosing the Right Bananas: The riper the bananas, the better! Brown, spotty bananas are ideal as they bring out the best natural sweetness and flavor.
  • Buttermilk Substitute: If you don’t have buttermilk on hand, creating your own by adding lemon juice to milk works just as well. The acidity helps keep the bread tender.
