Dorito Chicken Bake is a cheesy, crowd-pleasing casserole that combines layers of flavorful chicken, creamy sauce, and crunchy Doritos. This recipe is easy to make and perfect for busy weeknights or a potluck dinner. The combination of cheesy goodness and the crunch of Doritos makes this dish a guaranteed hit with kids and adults alike.


Ingredients

  • 2 cups shredded cooked chicken: Use rotisserie chicken or leftovers for convenience.
  • 2 cups shredded Mexican cheese blend (divided): Adds melty, cheesy goodness.
  • 1 (10 oz) can cream of chicken soup: Provides a creamy base for the casserole.
  • 1/2 cup milk: Helps to create a smooth sauce.
  • 1/2 cup sour cream: Adds richness and tanginess.
  • 1 can Ro-Tel tomatoes, drained: Adds a spicy, tangy kick.
  • 1/2 packet taco seasoning: For bold, zesty flavor.
  • 1 large bag Doritos: Choose your favorite flavor (Nacho Cheese works great).
  • Shredded lettuce and diced tomato (optional): For garnish and added freshness.

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Filling: In a large mixing bowl, combine shredded chicken, 1 cup of shredded cheese, cream of chicken soup, milk, sour cream, drained Ro-Tel tomatoes, and taco seasoning. Mix until well combined.
  3. Assemble the Casserole: Grease a 2-quart casserole dish. Spread a layer of crushed Doritos across the bottom of the dish. Add half of the chicken mixture on top of the Doritos. Repeat with another layer of crushed Doritos and the remaining chicken mixture.
  4. Top with Cheese: Sprinkle the remaining 1 cup of shredded cheese over the top. For extra crunch, you can add more crushed Doritos on top if desired.
  5. Bake: Cover the casserole with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve: Remove from the oven and let cool slightly. Top with shredded lettuce and diced tomatoes if desired. Serve warm and enjoy!
