This Deviled Egg Pasta Salad is a delightful twist on the classic deviled eggs. The combination of creamy macaroni, hard-boiled eggs, and a zesty dressing creates a satisfying and flavorful side dish. The addition of spices and fresh vegetables adds depth and crunch to every bite, making it a perfect accompaniment to picnics, barbecues, or any gathering.

Deviled Egg Pasta Salad Recipe

Ingredients:

  • 8 ounces elbow macaroni, cooked and drained
  • 6 eggs, boiled, yolks removed and separated
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp white pepper
  • 2 celery stalks, sliced thin
  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1 small red onion, chopped
  • 1 tbsp white vinegar
  • 1 tbsp granulated sugar
  • Green onions for garnishing

Instructions:

  1. Macaroni Prep:
  • Cook the elbow macaroni according to the package instructions. Rinse, cool, and set aside.
  1. Egg Separation:
  • Cut the hard-boiled eggs in half, placing the yolks into a separate bowl. Chop the egg whites and add them to the macaroni bowl.
  1. Vegetable Additions:
  • To the macaroni and egg whites, add the chopped onion and sliced celery. These fresh and crunchy vegetables complement the creamy texture of the pasta and eggs.
  1. Yolk Mashing:
  • Mash the egg yolks using a fork. The yolks contribute a rich and velvety texture to the dressing, creating a luscious coating for the salad.
  1. Spice Infusion:
  • Sprinkle the mashed egg yolks with salt, pepper, paprika, cayenne pepper, and white pepper. This combination of spices adds depth and a hint of heat to the dressing.
  1. Dressing Creation:
  • In the bowl with the mashed yolks and spices, add mayonnaise, ketchup, mustard, white vinegar, and granulated sugar. Mix the ingredients thoroughly, creating a flavorful and zesty dressing for the pasta salad.
  1. Final Assembly:
  • Pour the dressing over the macaroni and vegetable mixture. Gently toss everything together until the pasta and vegetables are evenly coated with the delicious dressing.
  1. Chill and Garnish:
  • Refrigerate the deviled egg pasta salad for at least an hour to allow the flavors to meld. Before serving, garnish the salad with green onions for a fresh and vibrant touch.

Tips:

  • Allow the pasta salad to chill in the refrigerator for a few hours or overnight before serving. This enhances the flavors and allows the dressing to fully infuse into the pasta.
  • Customize the spice levels to your preference. Adjust the amount of cayenne pepper and white pepper to control the heat.
  • Experiment with different types of pasta shapes for a fun variation in texture.
  • If preparing the pasta salad ahead of time, reserve some dressing to toss in just before serving to freshen up the flavors.
  • Sprinkle extra paprika or a dash of hot sauce on top for an additional burst of flavor and visual appeal.
