Customize the recipe to suit your taste preferences and enjoy the warm, comforting aroma as it bakes in the oven.

Delicious Chicken Pot Pie Recipe

Ingredients:

  • 1 cup Potato, diced
  • 1 cup Onion, diced
  • 1 cup Celery, diced
  • 1 cup Carrot, diced
  • 1/3 cup Margarine, melted
  • 1/2 cup All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Half-and-half
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 4 cups Chicken, cooked and chopped
  • 2 Pie crusts

How to Make Delicious Chicken Pot Pie:

  1. Preheat Oven: Adjust your oven’s temperature to 400°F.
  2. Sauté Vegetables: In a large skillet, sauté diced onion, celery, carrots, and potatoes in melted margarine for about 10 minutes, or until the vegetables are softened.
  3. Add Flour: Sprinkle flour over the sautéed vegetable mixture and stir well. Cook for an additional 60 seconds, stirring constantly.
  4. Combine Broth and Half-and-Half: Gradually combine chicken broth and half-and-half, stirring continuously until the mixture thickens and becomes bubbly.
  5. Season and Add Chicken: Stir in salt and pepper. Add the cooked and chopped chicken to the mixture, ensuring it is well combined.
  6. Transfer to Casserole Dish: Pour the mixture into a shallow 2-quart casserole dish.
  7. Top with Pie Shells: Place the pie crusts on top of the mixture, covering it entirely.
  8. Bake: Bake in the preheated oven for approximately 30-40 minutes, or until the crust is golden and flaky.
  9. Serve: Remove from the oven and let it cool for a few minutes before serving.

Tips:

  1. Pre-cook Chicken: To save time, use pre-cooked chicken. Rotisserie chicken works well for this recipe.
  2. Pie Crusts: You can use store-bought pie crusts for convenience, or make your own if you prefer a homemade touch.
  3. Vegetable Variations: Feel free to customize the vegetables to your liking. Peas, corn, or green beans can be great additions.
  4. Make-Ahead: Prepare the filling in advance and refrigerate. When ready to bake, add the pie crust and bake according to the instructions.
  5. Homemade Chicken Broth: For added flavor, consider using homemade chicken broth. If using store-bought, choose low-sodium options.
  6. Pie Crust Tips: If you’re using a pre-made crust, consider brushing it with an egg wash before baking for a shiny and golden finish.
