Ingredients

For the Chocolate Cake:

  • 2 cups (240g) all-purpose flour
  • 1½ cups (300g) granulated sugar
  • 1 cup (80g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup (240mL) milk
  • ½ cup (120mL) vegetable oil (or any neutral-flavored oil)
  • 2 teaspoons pure vanilla extract (optional)
  • 1 cup (240mL) hot black coffee (see notes)

For the Chocolate Fudge Frosting:

  • 1½ cups (180g) cocoa powder
  • 6 cups (800g) powdered sugar
  • 1½ cups (3 sticks / 340g) unsalted butter (softened to room temperature)
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract (optional)
  • 10 to 12 tablespoons milk

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C). Prepare two 9-inch round cake pans by buttering them and lining the bottoms with parchment paper. Dust the sides with cocoa powder and tap out any excess.
  2. Make the Cake Batter:
  • In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk well to blend.
  • Create a well in the center, then add the eggs, milk, vegetable oil, and vanilla extract. Whisk the wet ingredients in the center to break up the eggs, then gradually mix in the dry ingredients until just combined (do not overmix).
  • Slowly pour in the hot coffee, whisking until you achieve a thin batter.
  1. Bake the Cakes: Divide the batter evenly between the prepared pans. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  2. Prepare the Fudge Frosting:
  • Sift the cocoa powder and powdered sugar into a large bowl. Cut in the softened butter until the mixture resembles coarse crumbs.
  • Add salt, vanilla extract, and 5 tablespoons of milk. Mix until combined, then gradually add more milk until you reach a smooth and spreadable consistency (totaling 10 to 12 tablespoons of milk).
  1. Assemble the Cake: Place one cooled cake layer on a serving platter and spread about one-third of the frosting over the top. Layer the second cake on top and use the remaining frosting to cover the top and sides of the cake.
  2. Serve: Slice and enjoy this rich chocolate delight!
