Dad’s Creamy Cucumber Salad Recipe

Ingredients:

  • Cucumbers: 2 large, peeled and thinly sliced
  • Sweet onion: 1, thinly sliced
  • Sea salt: 1 tablespoon
  • Mayonnaise: 1 1/2 cups or more to taste
  • Vinegar: 2 tablespoons
  • White sugar: 1 tablespoon
  • Dried dill weed: 1 teaspoon
  • Garlic powder: 1 teaspoon
  • Ground black pepper: 1 teaspoon

Instructions:

  1. Prepare Cucumber Mixture:
  • In a bowl, combine thinly sliced cucumbers, sweet onion, and sea salt. Cover with plastic wrap and let it sit for half an hour.
  1. Drain Cucumber Mixture:
  • Transfer the cucumber mixture to a colander set over a bowl or sink. Allow it to drain for another half an hour, stirring occasionally, until most of the liquid has drained.
  1. Prepare Dressing:
  • In a separate bowl, whisk together mayonnaise, vinegar, sugar, dried dill weed, garlic powder, and ground black pepper until the dressing is smooth.
  1. Combine Ingredients:
  • Transfer the drained cucumber mixture to a large bowl.
  • Pour the prepared dressing over the cucumber mixture and stir to coat the vegetables evenly with the creamy dressing.
  1. Chill Before Serving:
  • Cover the bowl with plastic wrap and refrigerate for a minimum of 120 minutes before serving.
