This refreshing Cucumber and Avocado Salad is a light and healthy dish perfect for warm weather. Tips:

  1. Seeding Cucumbers: To remove the seeds from cucumbers, cut them in half lengthwise and use a spoon to scrape out the seeds.

Ingredients:

  • 2 cucumbers, seeded and cubed (see note)
  • 2 firm but ripe avocados, cubed
  • 1/4 cup chopped fresh cilantro
  • 1 clove garlic, minced
  • 2 tablespoons minced green onion or sliced red onion
  • 1/4 teaspoon salt
  • Pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons lime juice
