Ingredients:
- 1 1/3 cups warm water
- 2 1/4 teaspoons yeast
- 1 tablespoon brown sugar
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons olive oil
- 4 cups flour
Instructions:
- Activate Yeast: In a mixing bowl, combine warm water, yeast, and brown sugar. Stir and let it stand for a few minutes until the mixture starts to bubble and foam, indicating that the yeast is activated.
- Add Ingredients: Add olive oil and salt to the yeast mixture. Gradually add the flour while mixing until the dough comes away from the sides of the bowl. Knead the dough with a dough hook for a few minutes until it is smooth and elastic.
- First Rise: Cover the dough and let it rise in a warm place until doubled in size, about 30 minutes.
- Shape Loaves: Punch down the risen dough and divide it into two equal portions. Shape each portion into a loaf and place them on a baking sheet lined with parchment paper.
- Second Rise: Cover the loaves with a damp cloth and let them rise again until doubled in size.
- Preheat Oven: Preheat the oven to 375°F (190°C).
- Prepare Egg Wash: In a small bowl, beat together 1 egg and 1 tablespoon of water to create an egg wash.
- Brush and Score: Brush the risen loaves with the egg wash. Make a single long quick cut down the center of each loaf with a sharp knife.
- Create Steam: Place a shallow pan filled with at least 1 cup of hot water on the rack underneath the bread in the oven. The steam will help create a crispy crust.
- Bake: Bake the loaves for 25-30 minutes or until they turn golden brown and sound hollow when tapped on the bottom.
- Cool and Serve: Remove the loaves from the oven and cool them on racks. For added flavor and shine, rub butter over the hot crust.
