Crockpot Chicken and Dumplings

This Crockpot Chicken and Dumplings recipe is a comforting, hearty meal perfect for a cozy dinner. Tender chicken thighs are slow-cooked with creamy soups, fresh vegetables, and savory seasonings, then topped with buttery biscuits for the perfect finishing touch.

Ingredients:

  • 1 onion, diced
  • 6 boneless, skinless chicken thighs
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 2 tbsp fresh parsley, chopped
  • 1 tsp poultry seasoning
  • 2 cups chicken broth
  • 1 can buttermilk refrigerated biscuits
  • 2 cups frozen mixed vegetables, defrosted
  • Black pepper, to taste

Instructions:

  1. Prepare the Crockpot:
  • Layer the diced onion on the bottom of your crockpot.
  1. Layer the Chicken:
  • Place the chicken thighs on top of the chopped onion in a single layer.
  1. Mix the Soups:
  • In a mixing bowl, combine the can of cream of chicken soup and the can of cream of celery soup.
  1. Add Seasonings:
  • Add 1 tsp of poultry seasoning, 2 tbsp of chopped fresh parsley, and black pepper to taste to the soup mixture. Stir well to combine.
  1. Add to Crockpot:
  • Pour the soup mixture over the chicken thighs in the crockpot.
  • Pour 2 cups of chicken broth over the top of the chicken and soup mixture.
  1. Cook:
  • Set the crockpot to high and cook for 5 hours with the lid closed.
  1. Add Vegetables:
  • With 1 hour of cook time remaining, open the lid and add 2 cups of defrosted mixed vegetables.
  • Stir the vegetables into the crockpot, shredding the chicken thighs as you mix.
  1. Prepare the Biscuits:
  • Open the can of refrigerated biscuits. Flatten each biscuit and cut them into 4 long slices.
  1. Finish Cooking:
  • Place the biscuit slices on top of the mixture in the crockpot.
  • Close the lid and continue cooking for the remaining hour, or until the biscuits are cooked through and fluffy.
  1. Serve:
    • Once the biscuits are cooked and the mixture is heated through, serve warm.

Tips:

  • Vegetables: Feel free to customize the mixed vegetables to your liking. Carrots, peas, corn, and green beans are great options.
  • Chicken: For a richer flavor, you can brown the chicken thighs in a skillet before adding them to the crockpot.
  • Biscuits: If you prefer a crispier biscuit topping, you can bake the biscuits separately and place them on top of the chicken mixture just before serving.
  • Consistency: If the mixture is too thick, you can add more chicken broth to reach your desired consistency.
