This Crock Pot Banana Bread recipe offers a convenient way to enjoy delicious homemade banana bread without needing to turn on the oven. Made with simple ingredients like ripe bananas, butter, eggs, and flour, this recipe yields a moist and flavorful bread perfect for breakfast or snacking.

The slow cooking process in the crock pot allows the flavors to meld together while ensuring even cooking. Plus, the gentle heat helps to create a soft and tender texture.

Ingredients:

  • Whole eggs
  • 1/2 cup butter (softened, cubed)
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 whole bananas (medium-sized, mashed)
  • 1 cup chocolate chips (optional)
  • 1 cup nuts (walnuts or pecans, chopped, optional)

Instructions:

  1. Prepare the Batter: In a mixing bowl, combine softened butter, eggs, and granulated sugar. Mix until well combined.
  2. Incorporate Dry Ingredients: Add baking powder, baking soda, salt, and 1 cup of flour to the mixture. Mix well until combined.
  3. Add Mashed Bananas: Mash the bananas well and then add them to the mixture. Stir until well incorporated.
  4. Optional Add-Ins: If desired, fold in chocolate chips and chopped nuts into the batter at this stage.
  5. Prepare the Crock Pot: Butter a small crock dish to prevent sticking. Pour the batter into the greased dish, spreading it evenly.
  6. Cook in Crock Pot: Place the dish inside a 6-quart crock pot and cook on low heat for 4 hours. The top of the banana bread should be slightly browned, and the bread should bounce back to the touch.

Tips:

  1. Use Ripe Bananas: Make sure to use ripe bananas with brown spots for the best flavor and sweetness.
  2. Customize with Add-Ins: Customize your banana bread by adding chocolate chips, nuts, or dried fruit for extra texture and flavor.
  3. Check for Doneness: Test the banana bread for doneness by inserting a toothpick into the center. If it comes out clean, the bread is ready.
  4. Grease the Dish Well: Grease the crock dish thoroughly to prevent the banana bread from sticking to the sides during cooking.
  5. Serve Warm: Enjoy the banana bread warm from the crock pot, or let it cool slightly before slicing and serving. It pairs perfectly with a cup of coffee or tea for a delightful treat.
