Creamy Garlic Parmesan Chicken

Ingredients:

  • 2 large chicken breasts
  • Breading:
  • 4 tbsp Gluten-Free Bake Mix 2 or almond flour
  • 2 tbsp Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Garlic Butter Parmesan Sauce:
  • 2 tbsp butter
  • 3 tbsp crushed garlic
  • 1 1/4 cups chicken stock
  • 1 cup whipping cream
  • 1/4 cup grated Mozzarella cheese
  • 2 tbsp Parmesan cheese
  • 1/2 tsp dried cilantro or dried parsley
  • 2 tsp chopped fresh cilantro or parsley

How To Make Creamy Garlic Parmesan Chicken:

  1. Prepare Chicken: Slice chicken breasts in half lengthwise. In a small bowl, mix together the breading ingredients. Coat both sides of the chicken cutlets with the mixture.
  2. Cook Chicken: Heat olive oil in a large frying pan over medium heat. Cook the chicken cutlets on both sides until golden brown and almost cooked through. Set aside.
  3. Make Sauce: In another frying pan, melt butter over medium-low heat. Add crushed garlic and cook until golden. Stir in chicken stock, whipping cream, Mozzarella cheese, Parmesan cheese, and dried cilantro or parsley. Cook until the cheeses are melted and the sauce is well combined.
  4. Combine Chicken and Sauce: Add the cooked chicken to the sauce and cook for 1-2 minutes, until the chicken is tender and fully cooked. Be careful not to overcook the chicken.
  5. Serve: Sprinkle chopped fresh cilantro or parsley over the chicken and sauce. Serve hot and enjoy!

Tips:

  • Make sure to slice the chicken breasts evenly to ensure even cooking.
  • Don’t overcrowd the pan when cooking the chicken to ensure proper browning.
  • Adjust the seasoning according to your taste preferences.
