These Creamy Caramel Apple Taquitos are a delightful fusion of flavors that combine the warmth of cinnamon-spiced apples, the richness of cream cheese, and the sweetness of caramel syrup. Wrapped in a crispy, cinnamon-sugar coated tortilla, these taquitos make for a comforting and indulgent dessert that’s perfect for fall or any time you crave something sweet and cozy. They’re easy to prepare, and the result is a crunchy, gooey, and creamy treat that’s sure to impress.

Ingredients:

For the Apple Mixture:

  • 2 apples, peeled, cored, and diced
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • ½ teaspoon ground cinnamon

For the Cream Cheese Filling:

  • 4 ounces cream cheese, room temperature
  • ¼ cup caramel syrup (plus more for dipping later)

For the Taquitos:

  • 1 package Old El Paso flour tortillas for soft tacos and fajitas (6-inch, 10 count)
  • 2 tablespoons butter, melted
  • ⅓ cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C) and prepare a baking sheet by spraying it with cooking spray.
  1. Prepare the Apple Mixture:
  • In a skillet over medium heat, melt 2 tablespoons of butter. Add the diced apples, 2 tablespoons of sugar, and ½ teaspoon of ground cinnamon. Cook, stirring occasionally, for 5-7 minutes until the apples are soft and tender. Once done, remove the skillet from the heat and set it aside.
  1. Make the Cream Cheese Filling:
  • In a small bowl, combine the softened cream cheese and ¼ cup of caramel syrup. Mix until the filling is smooth and creamy.
  1. Assemble the Taquitos:
  • Lay out each tortilla flat. Spoon about 1 tablespoon of the cream cheese mixture onto the bottom third of each tortilla. Top with a spoonful of the cooked apple mixture. Roll the tortilla up tightly around the filling.
  1. Coat the Taquitos:
  • On a separate plate, combine ⅓ cup of granulated sugar with 2 teaspoons of ground cinnamon. Brush each rolled taquito generously with melted butter. Then, roll each taquito in the cinnamon-sugar mixture until well-coated. Place each taquito seam-side down on the prepared baking sheet.
  1. Bake:
  • Bake the taquitos in the preheated oven for 10-15 minutes, or until the tortillas are golden brown and crispy.
  1. Serve:
  • Allow the taquitos to cool slightly before serving. Serve warm with additional caramel syrup for dipping.

Tips:

  • Apple Variety: Choose a firm apple variety like Granny Smith for a tart flavor or Honeycrisp for a sweeter taste. This will help the apples retain some texture after cooking.
