Creamy Bacon Chicken

Creamy Bacon Chicken is a rich and flavorful dish that combines crispy bacon, tender chicken, and a creamy sauce. This comforting recipe is perfect for a cozy family dinner and pairs well with a variety of sides like mashed potatoes, pasta, or a simple salad.

Ingredients:

  • 6 strips bacon, cut into small pieces
  • 2 large chicken breasts, cut in half lengthwise
  • Flour for dredging
  • 1/4 teaspoon garlic powder
  • Pepper to taste
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1 tablespoon butter
  • 1 cup heavy/whipping cream

Instructions:

  1. Cook the Bacon:
  • Cut the bacon into small pieces using kitchen shears or a knife. Fry the bacon in a skillet over medium-high heat until crispy, about 10 minutes. Remove the bacon from the pan and set aside, leaving about 2 tablespoons of bacon fat in the skillet.
  1. Prepare the Chicken:
  • While the bacon is cooking, prep the chicken by cutting each breast in half lengthwise to create 4 smaller cutlets. Sprinkle each piece with garlic powder and pepper, then dredge them in flour, shaking off any excess.
  1. Cook the Chicken:
  • In the same skillet with the remaining bacon fat, cook the chicken over medium-high heat for 4-5 minutes per side until golden brown. If the pan splatters too much, reduce the heat slightly. Once browned, remove the chicken from the skillet and set aside.
  1. Make the Sauce:
  • Add the chicken broth, lemon juice, and butter to the skillet. Let the mixture bubble and reduce by half, about 3-4 minutes.
  1. Combine and Finish:
  • Stir in the heavy cream and bring to a gentle bubble. Return the chicken and bacon to the skillet, cooking for an additional 5 minutes or until the chicken is fully cooked through and the sauce has thickened to your liking.
  1. Serve:
  • Serve the creamy bacon chicken hot, garnished with additional bacon if desired. Pair with your favorite sides and enjoy!

Tips:

  • Bacon Fat: Be mindful of the amount of bacon fat left in the pan. If it seems like too much, you can remove a little before cooking the chicken.
  • Seasoning: Feel free to add more seasoning to the chicken or sauce, such as thyme or paprika, for additional flavor.
  • Consistency: If the sauce is too thick, you can add a splash more chicken broth to reach your desired consistency.
