Creamed Chicken and Biscuits Casserole

Indulge in the comforting flavors of this Creamed Chicken and Biscuits Casserole, a hearty and satisfying dish that’s perfect for cozy family dinners. With tender chicken, creamy sauce, and golden biscuits, this casserole is sure to become a new favorite in your recipe collection.

Ingredients:

  • 1 ½ teaspoons butter
  • 1 small onion, chopped
  • 2 pounds cooked chicken, cut or shredded
  • 1 can cream of chicken soup
  • ½ cup mayonnaise
  • 1 cup milk
  • ½ cup roasted red pepper, chopped
  • 1 ½ cups mild cheddar cheese
  • 1 can refrigerated biscuit dough

Instructions:

First Step: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C) and grease the bottom and sides of a baking dish.

Second Step: Saute Onion

  1. In a skillet, heat the butter over medium heat, then add the chopped onion. Saute until the onion begins to soften.

Third Step: Combine Ingredients

  1. In a large bowl, combine the cooked chicken, sauteed onion, cream of chicken soup, mayonnaise, milk, and chopped roasted red pepper. Mix until well combined, then pour the mixture into the prepared baking dish.

Fourth Step: Bake Initial Layer

  1. Bake the mixture for 15 minutes, then remove it from the oven. Sprinkle 1 cup of mild cheddar cheese over the top.

Fifth Step: Add Biscuit Layer

  1. Layer the refrigerated biscuit dough over the cheese, covering the entire surface.

Sixth Step: Bake Until Golden

  1. Sprinkle the remaining cheese over the biscuit layer, then return the baking dish to the oven. Bake for an additional 20 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.

Seventh Step: Serve and Enjoy

  1. Allow the casserole to cool for a few minutes before serving. Serve it as a standalone meal or pair it with a dinner salad for a complete and satisfying dinner.

Tips:

  • Use pre-cooked chicken to save time. Rotisserie chicken works great for this recipe.
  • Feel free to customize the casserole by adding your favorite vegetables or seasonings.
  • Ensure the biscuits are cooked through by checking for a golden-brown color and a slightly crisp texture on top.
