Creamed Chicken and Biscuits Casserole is a comforting, hearty dish that combines tender chicken, creamy sauce, and fluffy biscuits in one delicious bake. This casserole is perfect for a cozy family dinner or a potluck gathering, offering a satisfying mix of flavors and textures. The creamy filling is rich and flavorful, while the biscuits on top add a delightful contrast with their golden, flaky crust.

Ingredients:

  • 1 ½ tsp butter: For sautéing the onions.
  • 1 small onion, chopped: Adds flavor and aroma.
  • 2 pounds of cooked chicken, cut or shredded: Provides the main protein.
  • 1 can of cream of chicken soup: Adds creaminess and depth of flavor.
  • ½ cup mayonnaise: Enhances the creamy texture.
  • 1 cup of milk: Thins out the sauce to the perfect consistency.
  • ½ cup roasted red pepper, chopped: Adds color and a subtle sweetness.
  • 1 ½ cup mild cheddar cheese: Melts into the casserole, adding a cheesy layer.
  • 1 can refrigerated biscuit dough: Topping that bakes into fluffy, golden biscuits.

How To Make Creamed Chicken and Biscuits Casserole:

FIRST STEP:

  • Preheat the oven to 350°F.
  • Grease the bottom and sides of a baking dish to prevent sticking.

SECOND STEP:

  • Heat the butter in a skillet over medium heat.
  • Add the chopped onion and sauté until it begins to soften and turns translucent.

THIRD STEP:

  • In a large bowl, combine the cooked chicken, cream of chicken soup, mayonnaise, milk, roasted red peppers, and sautéed onions. Mix well to combine all ingredients.
  • Pour the mixture into the prepared baking dish and spread it out evenly.

FOURTH STEP:

  • Bake in the preheated oven for 15 minutes, then remove the dish from the oven.
  • Sprinkle 1 cup of the cheddar cheese over the top of the baked mixture.

FIFTH STEP:

  • Arrange the refrigerated biscuit dough over the cheese layer, covering the entire surface.
  • Sprinkle the remaining cheddar cheese over the biscuits.

SIXTH STEP:

  • Return the baking dish to the oven and bake for an additional 20 minutes, or until the biscuits are golden brown and cooked through.
  • Let the casserole sit for a few minutes before serving to allow the flavors to meld and the sauce to thicken slightly.

This dish can be enjoyed on its own as a complete meal, but it also pairs well with a fresh dinner salad for a balanced meal. The creamy chicken filling combined with the cheesy, biscuit topping makes for a delicious and satisfying comfort food that’s sure to please everyone at the table.

Tips:

  1. Prep Ahead: Cook and shred the chicken in advance to save time on the day you make the casserole.
  2. Cheese Variations: Try using different types of cheese, like mozzarella or Monterey Jack, for a different flavor profile.
  3. Add Veggies: Enhance the nutrition by adding other vegetables like peas, carrots, or corn to the filling.
  4. Spice It Up: Add a pinch of cayenne pepper or a dash of hot sauce to the filling for a bit of heat.

Enjoy this warm and comforting Creamed Chicken and Biscuits Casserole with your family and friends!
