Ingredients

  • 2 cups all-purpose flour
  • 2 cups cranberries, fresh or frozen
  • 1 ½ cups granulated sugar
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 8 oz cream cheese, at room temperature
  • 4 large eggs, at room temperature
  • 1 ½ teaspoons vanilla extract
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt

1. Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan with non-stick spray or butter, and set it aside.

2. Cream the Butter and Sugar

  • In a large mixing bowl, use a hand or stand mixer to beat the butter, cream cheese, and sugar together until light and fluffy (about 2–3 minutes).

3. Incorporate Eggs and Vanilla

  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

4. Combine Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, and salt.

5. Mix Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing to keep the loaf tender.

6. Fold in Cranberries

  • Gently fold in the cranberries using a spatula, ensuring they are evenly distributed throughout the batter.

7. Prepare for Baking

  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

8. Bake the Loaf

  • Place the pan in the oven and bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.

9. Cool and Serve

  • Remove the loaf from the oven and allow it to cool in the pan for 15 minutes. Transfer to a wire rack to cool completely before slicing and serving.
