Coca Cola Cake

Coca Cola Cake is a delightful, moist chocolate cake that combines the rich flavors of cocoa with the unique sweetness of Coca Cola. Topped with a luscious glaze and crunchy pecans, this cake is perfect for any occasion. Follow this simple recipe to create a delicious treat that will impress everyone.

Ingredients:

  • For the Cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 sticks (1 cup) unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1 cup Coca-Cola
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla extract
  • For the Glaze:
  • 1 stick (1/2 cup) unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup Coca-Cola
  • 4 cups powdered sugar
  • 1 cup chopped pecans

Instructions:

  1. Prepare the Oven and Pan:
  • Preheat your oven to 350°F (175°C).
  • Grease a 13×9-inch baking dish and set aside.
  1. Mix the Dry Ingredients:
  • In a large bowl, sift together the flour, granulated sugar, salt, baking powder, and cinnamon. Set aside.
  1. Make the Cake Batter:
  • In a medium saucepan over medium heat, melt 2 sticks of butter. Add 1/4 cup of cocoa powder and 1 cup of Coca-Cola. Stir to combine.
  • Bring the mixture to a boil, then remove from heat.
  • Pour the hot mixture over the dry ingredients and stir until just combined.
  • In a separate bowl, whisk together the buttermilk, eggs, and vanilla extract. Add this to the batter and mix until smooth.
  1. Bake the Cake:
  • Pour the batter into the prepared baking dish.
  • Bake for about 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  1. Prepare the Glaze:
  • During the last 10 minutes of baking, start the glaze.
  • In a medium saucepan over medium heat, melt the remaining stick of butter.
  • Add 1/4 cup of cocoa powder and 1/2 cup of Coca-Cola. Stir and bring the mixture to a boil.
  • Remove from heat and beat in the powdered sugar until smooth.
  • Stir in the chopped pecans.
  1. Finish the Cake:
  • When the cake is done, remove it from the oven and immediately pour the warm glaze over the hot cake.
  • Let the cake cool slightly to allow the glaze to set.
