The Reuben Sandwich is a savory classic that combines rich corned beef, melted Swiss cheese, tangy sauerkraut, and creamy Thousand Island dressing between buttery slices of rye bread. This sandwich is pan-grilled to crispy, golden perfection, making it a satisfying meal for lunch or dinner. Paired with a pickle spear and chips, it’s a deli favorite you can easily recreate at home.

Ingredients:

  • 8 slices rye bread
  • 4 tablespoons unsalted butter, softened
  • ½ cup Thousand Island dressing
  • 8 slices Swiss cheese
  • 1 pound thinly sliced corned beef
  • 1 cup sauerkraut, drained, squeezed dry, and warmed up

Instructions:

1. Prepare the Bread:

  • Butter one side of each slice of rye bread. Spread Thousand Island dressing on the non-buttered side of each slice.

2. Assemble the Sandwiches:

  • On half of the bread slices (dressing side up), layer Swiss cheese, corned beef, and sauerkraut.
  • Top each sandwich with the remaining slices of bread, placing them dressing side down to complete the sandwich.

3. Cook the Sandwiches:

  • Heat a medium skillet over medium heat. Place one sandwich at a time into the skillet.
  • Cook for about 3 minutes per side, or until the bread turns golden and the cheese melts. Adjust the heat if needed to avoid burning the bread while ensuring the cheese gets melted.

4. Serve:

  • Slice the sandwiches in half and serve with pickle spears and chips for the perfect deli-style meal!

Tips for Success:

  • Thoroughly Drain the Sauerkraut: Squeeze out any excess liquid from the sauerkraut to prevent the sandwich from becoming soggy.
  • Butter the Bread Evenly: This helps the bread get that beautiful golden crust and rich flavor while grilling.
  • Low-Medium Heat: Cook the sandwich over medium heat to allow the cheese to melt completely without burning the bread. If needed, lower the heat after the initial browning to ensure the cheese gets nice and gooey.

This Reuben Sandwich is an irresistible balance of textures and flavors, with the sharpness of the Swiss cheese, the savory corned beef, and the zesty bite of sauerkraut all enhanced by the creamy dressing. It’s a deli favorite that’s easy to whip up at home for a quick, yet hearty, meal.
