The patty melt is an iconic diner classic—a delicious cross between a cheeseburger and grilled cheese. This version features juicy beef patties, caramelized onions, melty Swiss or cheddar cheese, and a crispy, buttery crust on sourdough or rye bread. The addition of Thousand Island dressing and Dijon mustard adds a tangy contrast to the savory flavors, creating the perfect bite. This sandwich is a satisfying option for lunch or dinner and comes together quickly with just a few ingredients.


Ingredients

Caramelized Onions

  • 2 small yellow onions (sliced)
  • 2 tablespoons butter (divided)

Beef Patties

  • 1 pound lean ground beef (80/20)
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper (to taste)
  • 1 tablespoon butter

Sandwich

  • 8 slices sourdough or rye bread
  • 2 tablespoons butter (or as needed)
  • 6 ounces Swiss or cheddar cheese (sliced)
  • ¼ cup Thousand Island dressing (or burger sauce, optional)
  • Whole grain Dijon mustard (optional)

Instructions

  1. Caramelize the Onions
  • In a medium skillet, melt 2 tablespoons butter over low heat. Add the sliced onions and cook for about 20 to 25 minutes, stirring occasionally, until the onions turn golden and caramelized.
  1. Prepare the Beef Patties
  • In a bowl, mix the ground beef with Worcestershire sauce, salt, and pepper. Divide into four portions and shape into thin patties about the size of the bread slices.
  • In a cast-iron skillet, melt 1 tablespoon butter over medium-high heat. Cook the patties for 3-4 minutes on each side or until your desired level of doneness. Remove the patties and set aside.
  1. Assemble the Sandwiches
  • Spread Thousand Island dressing and Dijon mustard (if using) on one side of each slice of bread. Add a slice of cheese, caramelized onions, and a beef patty. Top with the second slice of bread.
  1. Grill the Patty Melts
  • In a clean skillet or on a griddle, melt 2 tablespoons of butter over medium heat. Place the assembled sandwiches in the skillet and cook for 3-4 minutes, until golden brown.
  • Flip each sandwich with a spatula, adding more butter as needed, and cook until the cheese melts and the bread is toasted on both sides.
  1. Serve
  • Remove from the skillet, let cool for a minute, then slice and serve while hot.

Tips for the Perfect Patty Melt

  • Slow Caramelization: Take your time cooking the onions on low heat for the best caramelized flavor.
  • Customize Your Cheese: Swiss and cheddar are classic options, but feel free to mix or substitute your favorite cheeses for added flavor.
