Classic Nanaimo Bars

Nanaimo Bars are a no-bake Canadian classic that features three decadent layers of texture and flavor. The base is a nutty, chocolaty crust with a slight crunch, topped by a creamy custard filling and finished with a rich chocolate topping. These layered bars are perfect for holidays, potlucks, or any time you crave a sweet treat that’s both indulgent and easy to make.


Ingredients

Bottom Layer

  • 2 cups graham cracker crumbs
  • 1 cup sweetened coconut flakes
  • 1 cup chopped walnuts or pecans
  • ⅔ cup melted butter
  • ½ cup granulated sugar
  • ¼ cup + 2 tablespoons unsweetened cocoa powder
  • 1 egg

Middle Layer

  • 3 tablespoons custard powder
  • 3 tablespoons milk
  • ½ teaspoon vanilla extract
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar

Top Layer

  • 5 ounces semi-sweet chocolate chips (about ¾ cup)
  • 2 teaspoons vegetable oil

Instructions

Prepare the Pan

  • Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with foil, leaving some overhang for easy removal.

Make the Bottom Layer

  1. In a medium mixing bowl, combine graham cracker crumbs, coconut flakes, chopped nuts, melted butter, sugar, cocoa powder, and the egg. Mix until fully combined.
  2. Press the mixture evenly into the prepared pan.
  3. Bake for 11 minutes and let cool completely before adding the next layer.

Prepare the Middle Layer

  1. In a mixing bowl, combine custard powder, milk, and vanilla extract. Add softened butter and mix until smooth.
  2. Gradually beat in powdered sugar until the mixture becomes fluffy and spreadable.
  3. Spread the custard mixture evenly over the cooled base layer. Refrigerate for at least 30 minutes to set.

Top with Chocolate

  1. Place chocolate chips and vegetable oil in a microwave-safe bowl. Heat on 40% power for about 45 seconds, then stir. Continue microwaving in 15-second intervals, stirring until completely smooth.
  2. Pour the melted chocolate over the custard layer and spread it evenly with a spatula.
  3. Refrigerate for about 5 minutes. Remove from the fridge and lightly score the chocolate with a knife to mark cutting lines (this helps prevent the chocolate from cracking later).
  4. Refrigerate for at least 4 hours or overnight.

Serve

  • Lift the bars out of the pan using the foil overhang and cut into squares or rectangles along the scored lines.

Tips for Perfect Nanaimo Bars

  1. Custard Powder Substitution: If you can’t find custard powder, instant vanilla pudding mix is a great substitute.
  2. Cutting Cleanly: Warm your knife with hot water and dry it before each cut to get clean, neat edges.
  3. Custom Toppings: Sprinkle sea salt, chopped nuts, or shredded coconut on the chocolate layer for an added twist.
  4. Storage: Store the bars in the refrigerator for up to a week or freeze for up to 2 months.
