Ingredients

Servings: 12 slices of cake

  • 1½ cups espresso or strong coffee (room temperature)
  • 6 tablespoons golden rum (divided)
  • 40 ladyfingers
  • 6 large egg yolks
  • ¾ cup granulated sugar
  • 16 oz mascarpone (cold)
  • 2 cups heavy whipping cream (cold)
  • 2-3 tablespoons unsweetened cocoa powder (for dusting)

Instructions

1. Prepare the Coffee Mixture:

  • Combine 1½ cups of espresso with 3 tablespoons of rum in a bowl. Set aside.
  • Working quickly, dip half of the ladyfingers one by one into the coffee mixture. Be careful to dip briefly—just enough to moisten each side without soaking them, which could lead to a soggy tiramisu.
  • Arrange the dipped ladyfingers in a single layer at the bottom of a 9×13-inch casserole dish.

2. Prepare the Egg Mixture:

  • In a medium heat-proof bowl, whisk together the egg yolks and sugar. Place this bowl over a saucepan with simmering water (making sure the bowl doesn’t touch the water) and whisk constantly on low heat for about 10 minutes. The mixture should lighten in color, thicken slightly, and no longer feel grainy when rubbed between your fingers. Once done, remove from heat and let cool for a few minutes.

3. Make the Mascarpone Mixture:

  • In a large bowl, beat the mascarpone with 3 tablespoons of rum using an electric mixer until smooth. Gradually add the cooled egg yolk mixture and continue beating until everything is well combined.

4. Whip the Cream:

  • In a separate bowl, whip the heavy cream until stiff peaks form. Be sure the cream is cold to achieve the best results.
  • Gently fold half of the whipped cream into the mascarpone mixture using a spatula. Once incorporated, fold in the remaining whipped cream. Be careful not to overmix as the cream could become grainy.

5. Layer the Tiramisu:

  • Spread half of the mascarpone cream mixture over the layer of ladyfingers in the dish.
  • Dip the remaining ladyfingers in the espresso-rum mixture and arrange them on top of the cream layer.
  • Spread the remaining mascarpone cream evenly over the second layer of ladyfingers.

6. Chill and Serve:

  • Cover the tiramisu with plastic wrap and refrigerate for at least 8 hours, or preferably overnight, to allow the flavors to meld and the dessert to set properly.
  • Before serving, dust the top with unsweetened cocoa powder. If you prefer, you can dust it ahead of time—though it will darken as it absorbs some moisture.
