This Classic Crepe Recipe is a simple and versatile base for sweet or savory fillings. With just a few ingredients and a quick process, you’ll create delicate, thin crepes perfect for breakfast, brunch, or dessert. Enjoy them filled with fruit and cream, or keep it savory with ham and cheese—either way, they’re sure to impress!

Ingredients

  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 2 large eggs (room temperature)
  • 2 tablespoons vegetable oil
  • 1 teaspoon granulated sugar
  • 1 pinch salt

Instructions

  1. Prepare the Batter
  • In a blender, combine eggs, milk, flour, vegetable oil, sugar, and salt. Blend until the batter is smooth.
  • For best results, refrigerate the batter for at least 30 minutes, or up to 24 hours, allowing the flour to absorb the liquid for a more tender crepe.
  1. Cook the Crepes
  • Heat a 6-inch skillet over medium heat and lightly coat it with a small amount of oil or butter.
  • Pour about 2 tablespoons of batter into the center of the pan, then immediately lift and rotate the skillet to spread the batter into a thin, even layer.
  1. Cook Until Set
  • Cook the crepe for about 90 seconds, or until bubbles form on top and the edges begin to lift. Flip and cook for just a few seconds on the other side, if needed.
  • Carefully remove the crepe from the skillet and place on a plate. Repeat with remaining batter.
  1. Serve and Enjoy
  • Stack crepes and serve them warm, adding your favorite fillings, such as fresh fruit, whipped cream, Nutella, or savory options like cheese and herbs.

Tips for Perfect Crepes

  • Chill the Batter: Resting the batter helps create smoother, more elastic crepes.
  • Avoid Over-oiling: A light brushing of oil or butter keeps the crepes from sticking without making them greasy.
  • Thin Batter is Key: Aim for a thin, pourable batter consistency for delicate crepes; adjust with a little milk if needed.

This Classic Crepe is your gateway to endless filling possibilities, perfect for any occasion and adaptable for both sweet and savory cravings!
