This 7UP Cake recipe is a classic twist on pound cake that incorporates the refreshing taste of lemon-lime soda for extra lift and a subtle citrus flavor. Light and tender, this cake’s rich buttery texture is beautifully enhanced by a bright hint of lemon zest. Perfect for gatherings or family celebrations, this cake tastes just as delightful on its own as it does with an optional lemony glaze for an added layer of sweetness and tang.


Ingredients

  • 1 ½ cups unsalted butter, room temperature
  • 3 cups granulated sugar
  • 5 large eggs, room temperature
  • 3 cups all-purpose flour
  • ⅔ cup 7UP soda
  • Zest of 1 lemon

Optional Lemon Glaze Ingredients

  • 2 cups powdered sugar
  • 1 tablespoon milk
  • 1 tablespoon lemon juice
  • Lemon zest, optional for garnish

Instructions

  1. Prepare the Pan: Preheat your oven to 350°F (175°C). Grease and flour a bundt pan generously, ensuring the cake releases easily after baking.
  2. Cream Butter and Sugar: In a stand mixer or large bowl, beat the softened butter until creamy. Add the sugar gradually and continue to beat for 1-2 minutes, until light and fluffy.
  3. Incorporate Eggs and Flour: Add the eggs one at a time, mixing well after each addition. Gradually add the flour, mixing just until combined.
  4. Add the 7UP and Lemon Zest: Pour in the 7UP soda and lemon zest. Mix on low speed until just combined, being careful not to overmix.
  5. Bake the Cake: Pour the batter into the prepared bundt pan, smoothing out the top. Bake for 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Let the cake cool in the pan on a wire rack for about 10 minutes. Invert the pan to release the cake, and allow it to cool completely before slicing.

Optional Glaze

  • In a bowl, whisk together powdered sugar, milk, and lemon juice until smooth. Drizzle over the cooled cake, and top with extra lemon zest if desired.
