These Cinnamon Blondies are a delightful twist on the classic blondie, infused with warm cinnamon and a hint of nutmeg for a cozy, spiced flavor. The rich, buttery base is topped with a sweet cinnamon-sugar mixture that creates a delicate, crackly crust. Perfect for fall or whenever you crave something comforting and sweet, these blondies are easy to make and even easier to enjoy.

Ingredients:

Blondies:

  • 1/2 cup butter, softened
  • 1 cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg, room temperature
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Topping:

  • 1 1/4 teaspoons sugar
  • 1/4 teaspoon ground cinnamon

Instructions:

  1. Preheat and Prep: Preheat your oven to 350°F (175°C) and grease an 8-inch baking dish. This size is perfect for creating thick, chewy blondies.
  2. Make the Blondie Batter: In a large mixing bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy, about 2-3 minutes. This ensures a tender and chewy blondie. Add in the vanilla extract and the egg, and beat until fully incorporated.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the creamed mixture, beating just until combined. Be careful not to overmix, as this can make the blondies tough.
  4. Spread and Top: Spread the batter evenly into the prepared baking dish. The batter will be thick, so use a spatula to smooth it out. In a small bowl, mix together the topping ingredients—sugar and cinnamon—and sprinkle evenly over the batter.
  5. Bake: Bake in the preheated oven for 25-30 minutes, or until the blondies are set and the top is golden brown. A toothpick inserted into the center should come out with a few moist crumbs.
  6. Cool and Serve: Allow the blondies to cool completely in the pan on a wire rack. Once cool, cut into bars and enjoy!
