This Cinna-bun Cake combines the best of a cinnamon roll and a coffee cake, offering a deliciously sweet and buttery treat. Perfect for breakfast, brunch, or dessert, this cake features a tender base swirled with a rich cinnamon-sugar topping, finished with a luscious vanilla glaze. It’s an irresistible treat that’s easy to make and sure to impress!

Ingredients:

Base:

  • 3 cups flour
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1 1/2 cups milk
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup butter, melted

Topping:

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2 tablespoons flour
  • 1 tablespoon cinnamon

Glaze:

  • 2 cups powdered sugar
  • 5 tablespoons milk
  • 1 teaspoon vanilla

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 350°F (175°C).
  • Prepare a 9×13-inch baking pan by spraying it with non-stick cooking spray or coating it with butter.
  1. Prepare the Base:
  • In a large bowl, combine the flour, salt, sugar, and baking powder.
  • Add the milk, eggs, and vanilla, mixing until thoroughly combined.
  • Stir in the melted butter last, then pour the batter into the prepared pan and set aside.
  1. Prepare the Topping:
  • In a small bowl, mix together the softened butter, brown sugar, flour, and cinnamon until well combined.
  1. Assemble the Cake:
  • Drop the topping mixture by teaspoonfuls evenly over the base.
  • Use a butter knife to swirl the topping into the base, creating a marbled effect.
  1. Bake:
  • Place the cake in the preheated oven and bake for 28-30 minutes, or until a toothpick inserted into the center comes out clean.
  1. Prepare the Glaze:
  • While the cake is baking, prepare the glaze by mixing the powdered sugar, milk, and vanilla in a small bowl until fully combined.
  1. Glaze the Cake:
  • Once the cake is baked, remove it from the oven and pour the glaze over the cake while it is still warm.

Tips:

  • Swirling Technique: Be gentle when swirling the topping into the base to ensure the flavors are well-distributed without fully mixing them together.
  • Even Baking: Check the cake a few minutes before the minimum baking time to avoid over-baking. The edges should be golden and the center set.
  • Storage: Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Warm individual slices in the microwave before serving for the best texture.

Enjoy this delightful Cinna-bun Cake warm, straight from the oven, and experience the heavenly blend of cinnamon, butter, and vanilla in every bite!
