Instructions

  1. Prepare the Marinade:
  • In a medium bowl, mix together the chopped cilantro, lime juice, honey, olive oil, garlic, cumin, chili powder, salt, and black pepper.
  1. Marinate the Chicken:
  • Add the chicken thighs or breasts to the bowl with the marinade, tossing well to ensure each piece is coated. Cover and let marinate for at least 30 minutes, or up to 2 hours for maximum flavor.
  1. Grill the Chicken:
  • Preheat your grill to medium-high heat (around 375°F) and lightly oil the grates.
  • Place the marinated chicken on the grill and cook for 7-8 minutes on one side. Flip and cook for an additional 6-8 minutes, or until the internal temperature of the chicken reaches 165°F.
  • Remove from the grill and let the chicken rest for 5 minutes.
