Chicken Stuffed Jalapeños offer a flavorful twist on traditional stuffed peppers, combining lean minced chicken with a variety of colorful peppers and spices. These stuffed jalapeños make for a delicious appetizer or main dish, perfect for any occasion. They are easy to prepare and can be customized to suit your taste preferences, whether you prefer a milder or spicier version.

Ingredients:

  • Lean Minced Chicken: Provides a lean source of protein for the stuffing.
  • Yellow, Red, and Green Peppers: Add color and sweetness to the dish, while also serving as the edible vessel for the stuffing.
  • Jalapeño Pepper: Adds a hint of heat and flavor to the stuffing. Adjust the amount according to your preference for spiciness.
  • Barbecue Sauce: Adds sweetness and tanginess to the filling, enhancing the overall flavor.
  • Cooked Basmati Rice: Adds texture and bulk to the stuffing mixture.
  • Egg: Helps bind the stuffing ingredients together.
  • Sliced Mushrooms and Shredded Carrots: Provide additional flavor and texture to the stuffing.
  • Ground Cumin: Adds warmth and depth of flavor to the filling.
  • Parsley (optional garnish): Adds freshness and visual appeal to the finished dish.

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the peppers by cutting them in half vertically and removing the seeds and membranes. Keep the tails intact to help hold the stuffing.
  3. In a mixing bowl, combine the minced chicken, cooked rice, chopped jalapeño pepper, sliced mushrooms, shredded carrots, barbecue sauce, ground cumin, and egg. Mix well to combine all the ingredients evenly.
  4. Generously fill each pepper half with the chicken and rice mixture, pressing it down gently to ensure it fills the cavity.
  5. Place the stuffed peppers in a baking dish and pour a cup of water into the bottom of the dish to prevent the peppers from drying out during baking.
  6. Bake the stuffed peppers in the preheated oven for 45 minutes or until the peppers are tender, the chicken is fully cooked through, and the filling is golden brown.
  7. Garnish with fresh parsley before serving, if desired.

Tips:

  • Adjust the amount of jalapeño pepper according to your desired level of spiciness. You can remove the seeds and membranes for a milder flavor or leave them intact for extra heat.
  • Feel free to customize the filling by adding other ingredients such as diced onions, corn kernels, or black beans.
  • Serve the stuffed jalapeños as an appetizer or main dish, accompanied by your favorite dipping sauce or side dishes such as a salad or grilled vegetables.
