Chicken Parmesan

This Chicken Parmesan recipe offers a delicious twist on the classic Italian dish. Tender chicken breasts are cooked to perfection and then smothered in a creamy sun-dried tomato sauce packed with flavor. The addition of spinach adds a pop of color and nutrition to the dish, making it both tasty and wholesome.

Ingredients:

  • 2 chicken breasts
  • 3 tablespoons butter
  • 1 tsp. oregano
  • Salt and pepper to taste
  • 1 medium onion, minced
  • 1 small jar sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup spinach
  • 1/3 cup grated Parmesan cheese

Instructions:

  1. Prepare Chicken:
    Season chicken breasts with salt, pepper, and half teaspoon of oregano.
  2. Cook Chicken:
    In a large skillet, melt butter over medium-high heat. Add chicken breasts and cook for 3-4 minutes on each side or until browned. Remove cooked chicken from the skillet and set aside.
  3. Make Sauce:
    In the same skillet, add one tablespoon of butter. Cook minced garlic, minced onion, chopped sun-dried tomatoes, and remaining half teaspoon of oregano until fragrant and softened.
  4. Add Cream and Cheese:
    Pour in heavy cream, chicken broth, and grated Parmesan cheese. Stir well until the sauce is smooth and combined. Season with salt and pepper to taste.
  5. Add Spinach:
    Add spinach to the skillet and cook until wilted, stirring occasionally.
  6. Combine Chicken and Sauce:
    Return the cooked chicken breasts to the skillet and cook for an additional 2-3 minutes, allowing the chicken to absorb the flavors of the sauce.
  7. Garnish and Serve:
    Garnish the Chicken Parmesan with fresh chopped parsley and serve hot.

Tips:

  • Pound the chicken breasts to an even thickness before seasoning to ensure they cook evenly.
  • Use high-quality sun-dried tomatoes packed in oil for the best flavor.
  • Adjust the seasoning of the sauce according to your taste preferences.
  • Serve the Chicken Parmesan with your favorite pasta or crusty bread for a complete meal.
