Ingredients

  • For the Chicken:
  • 3 tablespoons olive oil
  • 1 to 1.25 pounds boneless skinless chicken breast, diced into bite-sized pieces
  • 1 tablespoon cumin
  • 1 tablespoon chili powder, or to taste
  • 3 to 4 cloves garlic, finely minced or pressed
  • For the Salad:
  • One 15-ounce can black beans, drained and rinsed (preferably no-salt-added)
  • Salt and freshly ground black pepper, to taste
  • 2 cups cherry or grape tomatoes, halved
  • 2 green onions, sliced into thin rounds
  • 1 or 2 medium ripe Hass avocados, diced into medium chunks
  • ⅓ cup fresh cilantro, chopped (or to taste)
  • 2 to 4 tablespoons freshly squeezed lime juice
  • 2 tablespoons apple cider vinegar
  • 1 to 3 teaspoons agave or honey (optional and to taste)
  • Pinch of cayenne pepper (optional and to taste)

Instructions

  1. Cook the Chicken:
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the diced chicken, then sprinkle evenly with cumin and chili powder.
  • Cook the chicken for about 5 minutes, stirring and flipping intermittently to ensure even cooking.
  • Add the garlic, stir to combine, and cook for about 1 minute, or until fragrant.
  1. Prepare the Salad Base:
  • Add the drained and rinsed black beans to the skillet, stir to combine.
  • Season everything with salt and pepper to taste, and cook for about 1 minute until the beans are lightly warmed.
  1. Assemble the Salad:
  • Transfer the skillet contents to a large bowl.
  • Add the halved tomatoes, sliced green onions, diced avocado, and chopped cilantro.
  • Drizzle with lime juice and apple cider vinegar, then gently stir to combine.
  1. Adjust Seasoning:
  • Check the seasoning balance. If desired, add the optional agave or honey for a touch of sweetness, and a pinch of cayenne pepper for a hint of heat.
  • Adjust with additional salt or pepper if needed. Taste and tweak to your preference.

  • Serve immediately for the freshest flavors. This salad can be enjoyed on its own, or as a filling for tacos, wraps, or as a side dish.
