Chicken and Broccoli Cheesy Casserole

This Chicken and Broccoli Cheesy Casserole is a wholesome and satisfying dish that’s perfect for any day of the week. Packed with tender chicken, nutritious broccoli, flavorful rice, and gooey cheese, it’s a family-friendly meal that’s easy to prepare and even easier to enjoy.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 chicken breasts, chopped into small pieces
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 4 cloves garlic, minced
  • ¾ cup uncooked rice
  • 10 oz cream of chicken soup (1 can)
  • 3 cups chicken broth (low-sodium)
  • 2 cups broccoli florets
  • 1 cup cheddar cheese
  • 1 tbsp chopped parsley

Instructions:

  1. Sauté Chicken and Onion:
  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and chicken breast pieces. Cook until browned.
  • Season with salt and pepper and add minced garlic. Cook for an additional 30 seconds.
  1. Cook Rice:
  • Stir in uncooked rice, cream of chicken soup, and 2 cups of chicken broth. Adjust broth quantity as needed.
  • Cook the rice until it’s fully cooked, usually about 15 minutes.
  1. Add Broccoli and Cheese:
  • Once the rice is cooked, add broccoli florets to the skillet and stir to combine.
  • Sprinkle cheddar cheese over the mixture and cook for an additional 2 minutes to allow the broccoli to soften and the cheese to melt.
  1. Broil:
  • Transfer the skillet to the broiler and broil until the cheese is melted and lightly browned on top.
  1. Garnish and Serve:
  • Remove the casserole from the broiler and sprinkle chopped parsley over the top for freshness.
  • Serve hot and enjoy!

Tips:

  • Feel free to customize this casserole with your favorite vegetables or additional seasonings.
  • Use low-sodium chicken broth to control the saltiness of the dish.
  • For added flavor, you can sprinkle some grated parmesan cheese on top before broiling.
