Chex Scotcheroos

Chex Scotcheroos are a delightful treat made with Chex cereal, peanut butter, and a sweet topping of melted chocolate and butterscotch chips. These no-bake treats are easy to make and perfect for satisfying your sweet tooth. They combine the irresistible flavors of peanut butter, chocolate, and butterscotch into one delicious snack that’s sure to please both kids and adults alike.

Ingredients:

  • Chex cereal: Provides the base for the treat and adds crunch.
  • Light corn syrup and sugar: Sweetens the mixture and helps bind it together.
  • Creamy peanut butter: Adds flavor and richness to the treat.

Topping:

  • Creamy peanut butter, chocolate chips, and butterscotch chips: Create a deliciously creamy and indulgent topping that adds extra flavor and sweetness to the Chex Scotcheroos.

Instructions:

  1. Line large trays or cookie sheets with parchment paper, wax paper, or silicone mats.
  2. Measure the Chex cereal into a large heatproof bowl.
  3. In a saucepan, combine the corn syrup and sugar over medium heat. Bring to a boil, then remove from heat and stir in the peanut butter until smooth.
  4. Pour the peanut butter mixture over the cereal and gently fold together until the cereal is completely coated.
  5. Use a large ice cream scoop to scoop out the mixture onto the prepared trays, forming about 30 stacks. Allow them to cool and set.
  6. In a microwave-safe bowl, combine the peanut butter, chocolate chips, and butterscotch chips. Microwave on 50% power for 3-4 minutes, stirring every 30 seconds until melted and smooth.
  7. Spoon 1 tablespoon of the melted mixture over each stack of Chex cereal. Let them set at room temperature or place them in the fridge to speed up the process.
  8. Once set, enjoy these delicious Chex Scotcheroos as a sweet and satisfying snack.

Tips:

  1. Use a large ice cream scoop to portion out the Chex mixture for uniform-sized stacks.
  2. Be sure to stir the peanut butter and chocolate mixture frequently while melting to prevent burning or overheating.
  3. Allow the Chex Scotcheroos to cool completely before serving to ensure the topping sets properly.
  4. Store any leftovers in an airtight container at room temperature for up to several days.
