Chewy Snickers Brownies

These Chewy Snickers Brownies are the perfect indulgence for chocolate and candy bar lovers alike. Rich, fudgy, and packed with chunks of Snickers, these brownies offer a delightful combination of flavors and textures in every bite. Here’s how to make them along with some helpful tips.

Ingredients

  • 1/3 cup Dutch-processed cocoa
  • 1 ½ teaspoons instant espresso powder
  • 1/2 cup plus 2 tablespoons boiling water
  • 2 ounces unsweetened chocolate, finely chopped
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 1/2 cup plus 2 tablespoons vegetable oil
  • 2 large eggs
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 ½ cups granulated sugar
  • 1 ¾ cups unbleached all-purpose flour
  • 3/4 teaspoon table salt
  • 16 “fun-size” Snickers, coarsely chopped

Instructions

  1. Prepare the Pan:
  • Preheat your oven to 350°F (175°C).
  • Butter the bottom and sides of a 9×13 inch metal baking pan.
  • Line the pan with two perpendicular sheets of parchment paper, allowing the ends to overhang the sides for easy removal later. Butter the parchment paper.
  1. Make the Chocolate Mixture:
  • In a large bowl, whisk together the cocoa powder, espresso powder, and boiling water until smooth.
  • Add the finely chopped unsweetened chocolate and whisk until it’s melted and smooth.
  • Whisk in the melted butter and vegetable oil until combined.
  1. Combine Wet Ingredients:
  • Add the eggs, egg yolks, and vanilla extract to the chocolate mixture, whisking until smooth and homogeneous.
  • Whisk in the granulated sugar until fully incorporated.
  1. Add Dry Ingredients:
  • Add the flour and salt to the bowl. Use a rubber spatula to mix until just combined.
  1. Assemble the Brownies:
  • Pour half of the batter into the prepared baking pan, spreading it evenly into the corners.
  • Sprinkle 3/4 of the chopped Snickers over the batter.
  • Spread the remaining batter over the Snickers layer, then sprinkle the top with the remaining Snickers pieces.
  1. Bake:
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs attached.
  • Transfer the pan to a wire rack and allow the brownies to cool in the pan for about 1½ hours.
  1. Cool and Cut:
  • Using the parchment paper overhang, lift the brownies from the pan and place them on a wire rack to cool completely, about 1 hour.
  • Once cool, cut the brownies into 2-inch squares and serve.
