The Cherry Layer Cake with Cherry Cream Cheese Frosting is a delightful dessert that bursts with the sweet and tangy flavor of maraschino cherries. This moist and fluffy cake is layered with cherries and topped with a creamy and decadent cherry cream cheese frosting. Each bite is a heavenly combination of rich cake and creamy frosting, making it a perfect treat for any occasion, from birthdays to holidays.

Ingredients:

  • Cake Flour: Provides a light and tender crumb to the cake.
  • Baking Powder and Salt: Leavening agents that help the cake rise and add flavor.
  • Butter and Vegetable Shortening: Ensure a moist and tender texture to the cake.
  • Sugar: Adds sweetness and moisture to the cake batter.
  • Maraschino Cherry Juice: Infuses the cake with cherry flavor and adds moisture.
  • Whole Milk: Provides richness and moisture to the cake batter.
  • Almond Extract: Enhances the cherry flavor and adds depth to the cake.
  • Maraschino Cherries: Chopped and folded into the cake batter for bursts of cherry flavor.
  • Egg Whites: Whipped to stiff peaks and folded into the batter to add lightness and airiness to the cake.

For the Frosting:

  • Cream Cheese and Butter: Creamed together to create a rich and creamy base for the frosting.
  • Confectioners’ Sugar: Sweetens and thickens the frosting to the desired consistency.
  • Maraschino Cherry Juice: Adds flavor and a hint of pink color to the frosting.

Instructions:

  1. Prepare the cake batter by sifting together the dry ingredients and creaming the butter, shortening, and sugar until fluffy.
  2. Alternately add the wet and dry ingredients to the creamed mixture, folding in the chopped cherries and whipped egg whites.
  3. Divide the batter between cake pans and bake until springy to the touch. Allow the cakes to cool completely.
  4. Prepare the frosting by creaming together the butter and cream cheese, then gradually adding the confectioners’ sugar and cherry juice until desired taste and consistency are achieved.
  5. Once the cakes are cooled, frost them generously with the cherry cream cheese frosting.
  6. Serve the cake slices with extra maraschino cherries for garnish, if desired.

Tips:

  • Be sure to grease and flour the cake pans generously to ensure easy removal of the cakes after baking.
  • For added cherry flavor, you can brush the cooled cake layers with additional maraschino cherry juice before frosting.
  • To achieve a smooth and creamy frosting, make sure the cream cheese and butter are at room temperature before mixing.
  • Decorate the frosted cake with additional maraschino cherries or cherry halves for a beautiful presentation.
